Strawberries + Yellow Cake


Taken at my desk at work I would like to display my strawberry cream cupcakes! YUMM!! To make these I used a simple yellow cake recipe.Too bad the students in my class ate them all!
The ones I made a couple days earlier were a DELICIOUS milk & dark chocolate cupcakes.. but overall the the frosting was the best part! Here's how I did it:

Fresh Strawberry Cream Cheese Frosting
2- 4oz packages of room temp. cream cheese
1 stick room temp butter
1lb (or less) confectioner's sugar (powdered sugar)- Add this in 1/2 c at a time and keep tasting your frosting until it's the sweetness you like!
1 tsp Vanilla
1 cup crushed/chopped frozen (or fresh) strawberries.

Side Note:
* My fresh strawberries were eaten.. hm what to do... had to resort to frozen organic strawberries. Problem was I didn't drain the frozen strawberries after they thawed. I added it all in which is why I have 2 packages of cream cheese to stiffen it a bit. So for the future you may want to drain the liquid after you thaw frozen strawberries. If you do that then you can half the butter, cream cheese and powdered sugar. It's really just a matter of playing with it to get the sweetness level you like :) Enjoy!

Simple Pink Birthday Cake


My Latest Creation... going to good use! Happy First Birthday Lily! I had fun making your cake & cupcakes xoxox

The cake was a milk chocolate with a fresh raspberry filling. I used a YUMMY new homemade buttercream that I've been playing with a bit to make it extra fresh and tasty. And Lily's mom found these ADORABLE suckers to put on top! Don't they just make the cake?!? I couldn't believe how cute it all turned out!!
