Devil's Delight

This is a special favorite.. Dark chocolate dream cake topped with a strawberry cream cheese frosting with dark chocolate sprinkled on top. Yes.. these have been a family fav!

Fall Fling

This is a special creation just for the fall that's soon to arrive. It's a delicious carrot cake with walnuts, shredded carrots and raisins in the cupcake topped with a special surprise! It's a {not too sweet} cinnamon & nutmeg cream cheese frosting. I even ate some of the frosting on toast!

Rich Chocolate Cake

Women + Waistlines Beware!!

Made this three layer delicious chocolate goddess for my Boss' B-day! It turned out AMAZINGGG!
Three layers of milk chocolate cake with a lite mousse in the middle layers with a light mousse layer on the outside. Covered in dark chocolate ganache and topped with crushed almond roca and blackberries. The base had small swirls of choclate fudge frosting. Need I say more?! This is a Woman's Delight!

Strawberries + Yellow Cake


Taken at my desk at work I would like to display my strawberry cream cupcakes! YUMM!! To make these I used a simple yellow cake recipe.Too bad the students in my class ate them all!
The ones I made a couple days earlier were a DELICIOUS milk & dark chocolate cupcakes.. but overall the the frosting was the best part! Here's how I did it:

Fresh Strawberry Cream Cheese Frosting
2- 4oz packages of room temp. cream cheese
1 stick room temp butter
1lb (or less) confectioner's sugar (powdered sugar)- Add this in 1/2 c at a time and keep tasting your frosting until it's the sweetness you like!
1 tsp Vanilla
1 cup crushed/chopped frozen (or fresh) strawberries.

Side Note:
* My fresh strawberries were eaten.. hm what to do... had to resort to frozen organic strawberries. Problem was I didn't drain the frozen strawberries after they thawed. I added it all in which is why I have 2 packages of cream cheese to stiffen it a bit. So for the future you may want to drain the liquid after you thaw frozen strawberries. If you do that then you can half the butter, cream cheese and powdered sugar. It's really just a matter of playing with it to get the sweetness level you like :) Enjoy!

Simple Pink Birthday Cake


My Latest Creation... going to good use! Happy First Birthday Lily! I had fun making your cake & cupcakes xoxox

The cake was a milk chocolate with a fresh raspberry filling. I used a YUMMY new homemade buttercream that I've been playing with a bit to make it extra fresh and tasty. And Lily's mom found these ADORABLE suckers to put on top! Don't they just make the cake?!? I couldn't believe how cute it all turned out!!

Frog Birthday Cake

They had a service auction at church so I auctioned off a custom cake! My fist attempt at making fondant in humidity was HORRIBLE! I might have to retire... after a few hours of trying the little guy came out great but it wasn't without some serious effort. Maybe I'll make cakes again when I'm back in Utah :)

Here's a bit of my process... after carving him the crum coat frosting began. Then I had to freeze him so he could keep his shape and then once frozen I put him on the already made pond which was dark choc cake with raspberry cream cheese filling with a lily pad on top. I usually don't like to freeze cakes however I was nervous he was going to fall apart. I had to work fast! :)

And after some careful gum paste work we have the... Final Product... a happy friendly frog! What do you think!? I painted him with water to give him and the lily pad a "wet" look like he had just gotten out of the pond.. looking back I should have just painted one or the other.. With all the little hang ups I think this guy turned out fun none-the less :) Enjoy! xoxo
