Petal Wedding Cake


The inspiration behind Yarixa & Matt's Wedding cake. Found on Brides.com as being one of the top 50 most beautiful cakes.  Found HERE
Yari wanted this cake but with green petals to match her beautiful wedding colors of green, black and white. It turned out to be a beautiful wedding ceremony and an awesome day! I was pretty pleased with the cake too!! Here's some of the work in progress pics :) Congrats Matt & Yari! xoxox


This was my petal creation station. Since I had never used gumpaste before I did some online tutorials and just started my petal creation station. I made over 1200 petals by the end!!! Luckily I didn't have to use them all but with not knowing how many I would need for sure I was happy to have some extra. Living in DC I also had to come up with a way to take this little beauties on the plane with me.. so with a lot of saran wrap and love they made their journey in a special tuperware inside my huge yellow purse!


Our original flight was canceled due to storms so we got in town Monday at 9pm with the wedding the next day at 8am and reception at 6pm so it was close to an all nighter for me decorating. This is not my usual "cake studio" but thanks to my wonderful MOM!! for baking all the cakes and letting me use her kitchen to decorate we made it work.

The cake was a dark chocolate (Danny's favorite) with a YUMMY ganache moose filling that was to DIE for! I had to make a few extra cupcakes for myself and the family!

She ordered 150 cupcakes along with the cake. I think the cupcakes turned out ADORABLE!!


Final Product! It's a keeper.... I wish the picture could show how green it was.. on here it looks like a mint green but the actual color was a lime green that really stood out beautiful.

2/3 c. whipping cream
7 oz. semi-sweet chocolate
3 1/2 oz. unsweetened chocolate
4 tbsp. unsalted butter
4 egg whites
1 c. sugar

Heat cream, semi-sweet chocolate and unsweetened chocolate together, stirring constantly. After chocolates have completely melted, stir in butter. Place pan in ice cold water or freezer until cool. Whip until fluffy.

Beat egg whites until stiff. Add sugar gradually while continuing to beat. Egg whites should be stiff and glossy.

Add chocolate to egg whites. Fold together gently.

I also gave it a little whip before I put it in the cake to keep it extra creamy! Enjoy! xoxox
